Daktronics open house

Today was the annual shareholders meeting and open house at Daktronics.  Many of our products were setup for viewing before the meeting.  I helped greet visitors and take them to the demo area.

Macaroni salad

Basic macaroni salad, with a few substitutions:  Spicy mayo instead of regular, and jalapenos and habaneros instead of bell peppers.  Add hot dog in a blanket to further Americanize your meal.

Sioux Falls Jazz Fest

Went down to SF to check out the Jazz & Blues fest on saturday, featuring many great local and national acts.  Headlining was Los Lonely Boys and Corey Stevens, both very good live shows.  I've uploaded more pictures and a few videos on my photobucket account here.

Fiery pan-seared penne


Seeking an alternate to traditional pasta and tomato sauce, I created my own pan-seared penne with plenty of kick.  If done right, you will be weeping uncontrollably (in a good way):

You will need:
1 lb of penne
1/2 large tomato, diced
1 jalapeno, diced
1/2 cup shredded habanero cheddar
olive oil
chili powder/red pepper flakes
salt/pepper
parsley

-Cook pasta 3/4 of the way, then drain and rinse in cold water.
-In pan over med. heat add oil, veggies and spices.
-Add enough pasta to cover the pan and let sear for 3 minutes.
-Repeat searing 1-2 times to finish the rest of the pasta.
-Mix all pasta and veggies.
-Throw on the cheese!

Of course you can add whatever else you want (hot sauce, chicken/shrimp or other peppers) but it is plenty hot as is.

Onion Update

Against all odds of success, I am sad to report I did not complete the Onion Challenge (6 onions in 9 days). In fact I was only able to eat a dismal 3. In my defense I did not share any of my onions, and did not have enough other food to prepare them with. I will try and keep my head up through this monumental failure.

The Onion Challenge

After returning from vacation trips before finals began, I seemed to be at a lack of food. I gathered with my friends for our habitual trek to the local Aldi's down the street. I usually buy mostly the same things, with maybe one new item each trip. I usualy get lettuce and tomates for sandwhiches or sauce. However I wanted a change, and I had been craving onions for some reason. So I substituted a bag of six onions for the lettuce. Then it hit me in the check-out line how little time I have left in Limerick between trips: 8 days from May 6th. Can I really eat 6 entire onions in 8 days? There's no reason not to try, but these first few days have shown me I have to drastically pick up my pace as I have only eaten one in 2 days! I'v thrown them in wraps, ramen noodles, and spaghetti sauce, but I guess I need to step it up. Who knows maybe they make a good snack food?

The Yellow House

When the University of Limerick decided to expand across the River Shannon, they had plenty of land available to build apartments and the Health Science building, but right in the middle of their plans was this:

How could they want to demolish such a pristine innocent home?  (With their state-funded budget, the University could do anything).  Offering this family more than $1 Million Euro for their property seemed like a good offer.  Yet as you can see, it was turned down.  Watch out, your home may be next to be invaded by a sprawling college campus.
